Recipe: Garlicky Beetroot & Feta Risotto
I think beetroot might be my favourite vegetable. It’s so earthy and sweet and delicious, and they’re now in season which means our Riverford box usually has a few in each week! We also went to our local pick-your-own farm a few weeks ago and picked some there, which is when I put together this recipe.
